Looking for a quick and easy fall salad? Pat has you covered! Just a handful ingredients makes this kale salad come together quickly and an all time favorite! The best part is the maple butter dijon dressing! Pat hopes you enjoy and add this salad to your rotation!
2 lemons (one for massaging the kale, one for the dressing)
Sweet potato
Brussel sprouts
Apple
Red onion
Goat cheese
Candied walnuts
Dressing
1 tsp maple butter
1 tsp dijon mustard
salt & pepper
2 tsp olive oil
Directions
Chop and roast sweet potatoes and Brussels sprouts at 425º for 30 minutes
Meanwhile, place kale in a bowl and squeeze lemon juice over and massage well
Chop the onion and apple
Once sweet potatoes and Brussels are done, take out from oven and assemble salad (just throw it all on kale)
Make the dressing
Combine 2 tsp olive oil with 1 tsp dijon mustard and 1 tsp of maple butter (you could use maple syrup) and 1/2 lemon juice. Add salt and pepper to taste
