Fall Kale Salad with Maple Butter Dijon Dressing

Ingredients

  • Kale

  • 2 lemons (one for massaging the kale, one for the dressing)

  • Sweet potato

  • Brussel sprouts

  • Apple

  • Red onion

  • Goat cheese

  • Candied walnuts

  • Dressing

  • 1 tsp maple butter

  • 1 tsp dijon mustard

  • salt & pepper

  • 2 tsp olive oil

Directions

  1. Chop and roast sweet potatoes and Brussels sprouts at 425º for 30 minutes

  2. Meanwhile, place kale in a bowl and squeeze lemon juice over and massage well

  3. Chop the onion and apple

  4. Once sweet potatoes and Brussels are done, take out from oven and assemble salad (just throw it all on kale)

Make the dressing

  1. Combine 2 tsp olive oil with 1 tsp dijon mustard and 1 tsp of maple butter (you could use maple syrup) and 1/2 lemon juice. Add salt and pepper to taste

  2. Drizzle the dressing on your salad

  3. Enjoy!
