
Spicy Pumpkin Curry

Ingredients
Vegetables of choice (bell peppers, onion, broccoli)
1 bag baby Dutch yellow potatoes
1 jar Trader Joe's Spicy Pumpkin Curry Simmer Sauce
Protein of choice (can omit if making vegetarian)
Optional: 1 jar Trader Joe's Red Pepper Spread
Salt, pepper, garlic powder, 21 Seasoning Salute to taste
1-2 cups chicken or vegetable stock
Directions
Chop all produce and potatoes
Season with spices
In a heavy pot, coat with olive oil and add vegetables and potatoes
Add broth
Prepare protein to your liking
After 15-20 minutes, add red pepper spread and pumpkin curry simmer sauce
Add protein and let simmer for 1-2 hours or until vegetables and potatoes are cooked and fork tender
Serve with a side of rice and enjoy!
