Ingredients: 1 box of hearts of palm pasta; 1/2 red bell pepper, sliced; 1 large carrot, sliced; 1 egg; 2 teaspoons of minced ginger; 1.5 tablespoons peanut butter; 1/2 tablespoon honey; 1 tablespoon rice vinegar; 1/2 teaspoon fish sauce; 2 tablespoons soy sauce; red pepper flakes; chopped peanuts (or almonds); green onions; cilantro; lime juice

Flippin' Pat is flipping out over this Hearts of Palm Veggie Pad Thai recipe! One of Flippin' Pat's favorite items at Trader Joe's is the Hearts of Palm pasta and this recipe has purely leveled up everything! This recipe is so easy and Flippin' Pat thinks Thai food is always a good idea!

Ingredients

1 box of hearts of palm pasta
1/2 red bell pepper, sliced
1 large carrot, sliced
1 egg
2 teaspoons of minced ginger

Sauce

1.5 tablespoons peanut butter
1/2 tablespoon honey
1 tablespoon rice vinegar
1/2 teaspoon fish sauce
2 tablespoons soy sauce
red pepper flakes

Garnish

chopped peanuts (or almonds)
green onions
cilantro
lime juice

Directions

mix all the sauce ingredients together and set aside
over medium heat, sauté ginger, bell pepper and carrots and mix well
add in hearts of palm. Mix well and cook for 5 minutes
push veggies to the side and scramble 1 egg until cooked. Mix with veggies
stir in sauce, mix well and stir until well coated
plate and add all the toppings
enjoy!
