Calling all lasagna lovers! Pat is so excited to share this new Lasagna Soup recipe with you! It has everything you love about lasagna in one big bowl of hearty soup! Pat knows most of you can use a little warming up lately and hopes you try this simple and delicious recipe soon!
Olive oil spray
1 pound Italian Chicken Sausage
1 large diced shallot
1 teaspoon minced garlic
1/2 teaspoon each salt and pepper
2 cups marinara
1 quart chicken broth
Shredded mozzarella and fresh basil for topping
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
Salt & pepper to taste
Brown chicken sausage in Dutch oven sprayed with olive oil
When meat begins to brown, add minced garlic and diced shallots and sauté and few more minutes until translucent
Add in marinara and broth and bring to a simmer
Add in noodles and allow to cook 10-15 minutes
Mix ricotta topping, Parmesan, and salt & pepper. Set aside
Serve with ricotta mixture, shredded mozzarella, extra Parmesan, and fresh basil
I believe that is Malfaldine pasta, not actual lasagna pasta. The question is how much? 1 box?
