
Lasagna Soup

Ingredients
Olive oil spray
1 pound Italian Chicken Sausage
1 large diced shallot
1 teaspoon minced garlic
1/2 teaspoon each salt and pepper
2 cups marinara
1 quart chicken broth
Shredded mozzarella and fresh basil for topping
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
Salt & pepper to taste
Ricotta Topping
Directions
Brown chicken sausage in Dutch oven sprayed with olive oil
When meat begins to brown, add minced garlic and diced shallots and sauté and few more minutes until translucent
Add in marinara and broth and bring to a simmer
Add in noodles and allow to cook 10-15 minutes
Mix ricotta topping, Parmesan, and salt & pepper. Set aside
Serve with ricotta mixture, shredded mozzarella, extra Parmesan, and fresh basil
