Sauce

1 container Trader Joe's Garlic Dip
1 container Trader Joe's Romesco Dip

Directions

Slice eggplant into rounds, salt, and let sit for 30 minutes
Preheat oven to 400ºF
Combine sauce ingredients in a bowl
After 30 minutes, blot each side of the eggplant
In a baking dish, line with sauce and then alternate in layers between eggplant, sauce, and cheese
Bake for 45-60 minutes until eggplant is tender
Prepare pasta to desired liking
Top with parmesan and garnish with parsley
