Refried Bean Tacodillas

Ingredients

  • avocado or neutral oil

  • 1 can refried beans

  • small flour tortillas

  • 1/2 of a large white onion

  • 1 red bell pepper

  • 1 cup or more of freshly grated pepper jack cheese

  • For Serving

  • sour cream + your favorite hot sauce

  • thinly cut iceberg lettuce

  • smashed avocado or whipped guacamole

Directions

  1. Start by thinly slicing the onion and red bell pepper. Then add oil to a skillet and sauté the onions/ pepper over medium low heat until softened - you can cook them as much or as little as you like, this is a preference thing. Remove from heat

  2. Next add a tablespoon of oil to a large flat bottomed pan (you can also do this on a griddle) heat the oil over medium low. Add in as many tortillas will comfortably fit without much overlap. Heat them for about 30 seconds on each side until they soften and start to puff up

  3. Remove the tortillas and use a spoon or butter knife to spread a layer of refried beans on each. Add the sautéed onions/peppers and a pinch of cheese. Add these back into the pan unfolded and cover for 3 minutes

  4. Uncover the pan and use a spatula to fold each tacodilla in half

  5. Continue this process until you run out of ingredients or have as many as you want

  6. Serve with sour cream mixed with your favorite hot sauce, thinly shredded iceberg lettuce, and smashed avocado.
