Pat always thinks that tacos are a good idea and is so excited to share this new Refried Bean Tacodilla recipe with you! Tacodillas have all of Pat's favorite things about tacos, quesadillas, and burritos. They are easy to hold and eat with your hands like tacos, they are folded and stuck together like a quesadilla, and they have beans like burritos. Pat hopes you try this recipe if you want to level up your taco game!
1 cup or more of freshly grated pepper jack cheese
For Serving
sour cream + your favorite hot sauce
thinly cut iceberg lettuce
smashed avocado or whipped guacamole
Directions
Start by thinly slicing the onion and red bell pepper. Then add oil to a skillet and sauté the onions/ pepper over medium low heat until softened - you can cook them as much or as little as you like, this is a preference thing. Remove from heat
Next add a tablespoon of oil to a large flat bottomed pan (you can also do this on a griddle) heat the oil over medium low. Add in as many tortillas will comfortably fit without much overlap. Heat them for about 30 seconds on each side until they soften and start to puff up
Remove the tortillas and use a spoon or butter knife to spread a layer of refried beans on each. Add the sautéed onions/peppers and a pinch of cheese. Add these back into the pan unfolded and cover for 3 minutes
Uncover the pan and use a spatula to fold each tacodilla in half
Continue this process until you run out of ingredients or have as many as you want
Serve with sour cream mixed with your favorite hot sauce, thinly shredded iceberg lettuce, and smashed avocado.
