Sour Cream & Onion Salmon Bowl

Ingredients

  • 1 lb skinless salmon filet

  • 1 bag Trader Joe's Sour Cream & Onion Rings

  • Brown or white rice

  • 1 tablespoon garlic

  • 5 oz plain Greek yogurt

  • 1-2 tablespoons mayo

  • Parmesan cheese to taste

  • Green onion and sesame seeds for garnish

Directions

  1. Pat salmon filets dry

  2. Mix together Greek yogurt, mayo, and garlic

  3. Blend sour cream & onion rings until they are a fine consistency resembling breadcrumbs

  4. Generously cover all sides of the salmon filets with yogurt mix

  5. Cover all sides of salmon with sour cream & onion ring breadcrumbs

  6. Top with parmesan

  7. Air fry at 390ºF for 14-15 minutes until salmon is cooked

  8. In a bowl, crumble salmon into small pieces (can leave whole if you'd like)

  9. Serve salmon over rice and garnish with green onions and sesame seeds

  10. Enjoy!
