Soy Chorizo Gravy

Ingredients

  • 1 tbsp butter

  • 2 tbsp flour

  • 2 cups milk

  • 1/2 cup soy chorizo

  • 1/4 tsp salt

  • 1 tsp cheesy seasoning

Directions

  1. Melt butter in a skillet over medium heat until melted. Add flour to pan and whisk until flour and butter form a paste

  2. Slowly add milk and continuously whisk until combined

  3. Turn heat to medium high to boil mixture, continuously whisking to keep milk from burning in the pan

  4. Once milk begins to boil, turn heat to low and simmer for 10 minutes or until mixture has thickened

  5. Add soy chorizo, salt and cheesy seasoning and stir until combined. Remove from heat

  6. Serve over ready-to-bake buttermilk biscuits and top with sliced green onions, shredded cheddar cheese and a fried egg
