Pat loves anything that involves pizza and is so excited to share this new stuffed pizza bites recipe with you. This recipe can be made gluten free, which Pat thinks is pretty cool. Pat hopes you try this recipe on your next game day, get together, or any occasion, do you really need an excuse to eat pizza?!
Preheat the oven to 400 degrees & line a baking sheet with parchment paper
Cut block mozzarella cheese into about 12 small cubes
Create the self-rising flour by combining 1 cup all-purpose OR gluten-free 1-to-1 baking flour + 1.5 tsp baking powder + 1/2 tsp salt
Make the dough by combining self-rising flour + Greek yogurt + garlic powder + oregano. Mix ingredients & knead dough with hands, for a few minutes. If the dough is too sticky, add in additional flour
Once dough is kneaded and easy to work with, place on a floured surface
With a floured rolling pin, roll dough out into a long, wide rectangle, until flat and even
Cut dough into equal sized squares, and roll into balls
Flatten dough balls with thumb, and place a small dollop of tomato basil marinara sauce & mozzarella cheese cube in the center. Fold up edges and press together, until each bite is sealed
Place each bite fold-side down on the lined baking sheet
Repeat until all dough has been used (makes around 12 bites, but depends on how small/large you make them)
Brush each bite with either melted butter or olive oil, and sprinkle with additional garlic powder & oregano
Place in the oven & bake for 15-20 minutes at 400 degrees, until crispy & browned
Once they have cooled enough to handle, plate & serve with tomato basil marinara sauce to dip
