Pat loves a tasty and simple pasta dish and is so excited to share this Summer Garden Pasta recipe with you! Combining the flavors of sweet Italian sausage, feta, and basil, this dish makes for a delicious weeknight meal! Pat hopes you enjoy!
Bring a pot of salted water to a boil, add the pasta and cook until al dente (about a minute less than package instructions)
While the pasta is cooking, cut the sausage into 1/4 - 1/2 inch slices. Cut the corn off of the cob and large dice the onion
Once the pasta is done, save about 1/2 cup of pasta water then drain the pasta and set it aside
Add olive oil, sausage, corn, and onion to the pot and cook over medium heat. Once you see some browning on the pan, add a splash of water, chicken broth, or white wine (like sauvignon blanc) to the pan to deglaze. This picks up all that yummy flavor! Keep cooking until the sausage is golden brown and the onion has softened - you may need to deglaze a second time
Add the pasta and 1/2 cup of pasta water back in to the pot. Add in red pepper flakes + feta and stir until the feta melts in
Roll the basil leaves up and thinly slice into ribbons - add most of it to the pasta and stir. Split between two plates or bowls, top with extra basil and a few crumbles of feta
