It comes together in 30 minutes which makes for a perfect weeknight meal with some heat! It's vegetarian but you can also add any meat to it! Pat hopes you enjoy!
1 package Trader Joe's Mexican Style Cauliflower Rice
Can of black beans
Can of corn
Toppings: cilantro, sour cream (or Greek yogurt), avocado
Preheat oven to 350º
In pan, cook cauliflower rice, once cooked, add black beans and corn. Stir well.
Fill each tortilla with mixture and roll up
Cover with enchilada sauce
Top with cheese
Bake for 20 minutes until cheese is melted and tortillas look crisp
Top with cilantro, sour cream or Greek yogurt, and avocado
