Veggie Enchiladas

Ingredients

  • Tortillas

  • Enchilada sauce

  • 1 package Trader Joe's Mexican Style Cauliflower Rice

  • Can of black beans

  • Can of corn

  • Cheese

  • Toppings: cilantro, sour cream (or Greek yogurt), avocado

Directions

  1. Preheat oven to 350º

  2. In pan, cook cauliflower rice, once cooked, add black beans and corn. Stir well.

  3. Fill each tortilla with mixture and roll up

  4. Cover with enchilada sauce

  5. Top with cheese

  6. Bake for 20 minutes until cheese is melted and tortillas look crisp

  7. Top with cilantro, sour cream or Greek yogurt, and avocado

  8. Enjoy!
