2 large chicken breasts, sliced in half lengthwise or four chicken cutlets
1 pint cherry tomatoes, halved
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 tablespoon melted butter
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Italian seasoning
1 teaspoon minced garlic
1 cup mozzarella
Basil and balsamic drizzle for serving
Directions
Preheat oven to 400° and spray bottom of baking dish with olive oil spray
Make sauce by whisking together balsamic vinegar, olive oil, melted butter, salt, pepper, Italian seasoning, and minced garlic. Set aside
Arrange chicken breasts (seasoned with salt and pepper) and halved cherry tomatoes in baking dish and pour balsamic sauce over everything
Bake for 20 to 30 minutes (depending on size of chicken breasts) until cooked through
Add 1 cup of mozzarella to top of chicken breasts, place back in the oven for about 5 minutes until cheese is melted and bubbly. I turned on broiler for about 90 seconds at the end!
Remove chicken from oven and top with a drizzle of balsamic drizzle and chopped fresh basil
