Easter Lemon Tarts

Happy Easter from the Pat family! If you are looking for a sweet treat to serve with Easter brunch, you have to try these Lemon Tarts! The flavor of the lemon curd combined with powdered sugar is a must at any brunch! Don't forget the lemon yogurt dipping spread- you won't regret it! Ingredients
2 eggs
1/4 cup oil (vegetable or canola)
1 teaspoon baking powder
2 1/2 cups flour
1/2 cup of sugar (brown or white)
1 1/2 tablespoon orange juice
1/2 teaspoon vanilla
1 jar lemon curd
plain Greek yogurt
Directions
Preheat the oven to 350ºF
In a large mixing bowl, beat eggs and add sugar gradually
Mix in oil, orange juice, and vanilla
Add baking powder and flour and mix really well until all ingredients are combined
Roll out dough thinly on a well floured surface with a rolling pin
Cut dough into small rectangles with a cookie cutter
Place each rectangle on a lined and greased baking sheet
Add a 1/2-1 teaspoon of filling of choice in the center of each rectangle
Add another rectangle on top
Crimp all sides with a fork delicately
Line each rectangle on baking sheet leaving 2-3 inches between each one
Stick in the freezer for 10 minutes before baking
Bake for 20 minutes until they are golden brown
Let them cool and sprinkle with powdered sugar
Mix together Greek yogurt and lemon curd
