Easter Lemon Tarts

Ingredients

  • 2 eggs

  • 1/4 cup oil (vegetable or canola)

  • 1 teaspoon baking powder

  • 2 1/2 cups flour

  • 1/2 cup of sugar (brown or white)

  • 1 1/2 tablespoon orange juice

  • 1/2 teaspoon vanilla

  • 1 jar lemon curd

  • plain Greek yogurt

Directions

  1. Preheat the oven to 350ºF

  2. In a large mixing bowl, beat eggs and add sugar gradually

  3. Mix in oil, orange juice, and vanilla

  4. Add baking powder and flour and mix really well until all ingredients are combined 

  5. Roll out dough thinly on a well floured surface with a rolling pin

  6. Cut dough into small rectangles with a cookie cutter

  7. Place each rectangle on a lined and greased baking sheet

  8. Add a 1/2-1 teaspoon of filling of choice in the center of each rectangle

  9. Add another rectangle on top

  10. Crimp all sides with a fork delicately

  11. Line each rectangle on baking sheet leaving 2-3 inches between each one

  12. Stick in the freezer for 10 minutes before baking

  13. Bake for 20 minutes until they are golden brown

  14. Let them cool and sprinkle with powdered sugar

  15. Mix together Greek yogurt and lemon curd

  16. Enjoy!
