Easy Cheesy Turkey Taco Pasta

Ingredients

  • 1 pound ground turkey

  • Avocado oil spray

  • 3 tablespoons taco seasoning

  • 1 finely diced shallot

  • 1 finely diced jalapeño

  • 2 cloves minced garlic

  • 1/2 cup salsa

  • 1/4 cup milk or half and half

  • 1/2 cup sour cream

  • 12 ounces dried shell pasta

  • 1/2 cup reserved pasta water

  • 1 1/2 cups shredded cheese

  • Cilantro and crushed tortilla chips for serving

Directions

  1. Heat skillet to medium and spray with avocado oil spray. Sauté minced shallot, jalapeño, and garlic for about one minute until fragrant and tender. Add ground turkey and break up as it browns

  2. Cook pasta according to package directions

  3. Once ground turkey is cooked through, add taco seasoning and sauté 3 to 5 minutes more

  4. Add salsa, pasta water, and milk to deglaze the pan scraping the bottom of the pan. Allow to thicken for a minute or two. Mix in sour cream, cheese, and cooked pasta

  5. Serve with extra salsa, sour cream, cheese, chopped cilantro, and a few crushed tortilla chips if desired

  6. Enjoy!
