Mix shredded Monterey Jack into Everything and the Elote dip. Set aside
Season chicken with salt and pepper. Using sharp paring knife, make slits in the center of chicken breasts long ways without cutting through to the other side
Stuff chicken breasts with cheese and dip mixture. Used toothpick to close shut if necessary. Sprinkle Everything but the Elote seasoning all over chicken
Cook an air fryer at 400° for 10 to 15 minutes until chicken is cooked through to 165°. You can also cook in the oven at 350° for 25 to 30 minutes
While chicken cooks, cook frozen brown rice according to directions on the package. Heat 1 tablespoon of olive oil in skillet. Add cooked rice into skillet with pinch of salt, lime juice, and cilantro. Allow to crisp up for a few minutes
Arrange chicken over serving of rice and top with a sprinkle of shredded Monterey Jack, fresh corn, chopped cilantro, and lime wedge, if desired
