Ingredients

  • 1 head romaine lettuce

  • Handful of cherry tomatoes

  • 3 cocktail cucumbers

  • Handful of mini peppers

  • ¼ of a red onion

  • 1 tablespoon capers

  • 2 tablespoons kefir cucumber dressing from Trader Joe's

  • ¼ cup of feta cheese

  • ¼ cup of falafel mix, mixed with 6 tablespoons of water

  • ¼ cup prepared quinoa

Directions

  1. Roll falafel mix into balls and air fry for 10 minutes at 400. If you don’t have any air fryer, bake in oven at 400 for 20-30 minutes, until crispy

  2. Chop up all vegetables. Toss with capers, 1/4 cup feta cheese, 1/4 cup quinoa and 2 dressing. Mix well

  3. Plate and top with falafel balls

  4. Enjoy!
