Pull away the outer layer of leaves from the cabbage head and discard. Using a bit of force, cut the cabbage into 4 even segments through the stem. Cut out the tough bottom core in each segment and discard. Working with one segment at a time, cut it crosswise into thin 1/8-inch slices. The slices will fall apart into thin shreds
Pour the oil into a large saucepan and place over medium heat. When the oil is heated, add the shredded cabbage, turmeric, red pepper, salt, and black pepper. Cook for 15 minutes, stirring occasionally. The cabbage will start to reduce in volume
Add the peas. Stir to combine. Cook until the cabbage is tender, stirring occasionally, about 5minutes
