Jackfruit Cakes

Ingredients

  • 1 can of jackfruit

  • 3/4 cup panko

  • 1/4 cup vegan mayo

  • 3 green onions

  • 1/4 cup cilantro

  • juice 1/2 lemon

  • 1 tsp paprika

  • 1 tsp garlic powder

  • salt and pepper, to taste

Directions

  1. in food processor, chop green onion and cilantro. Drain and rinse jackfruit and add to food processor. Pulse a few times to break up the jackfruit

  2. in a bowl, combine the jackfruit mixture with remaining ingredients and mix well

  3. using 1/4 cup, form the jackfruit cakes

  4. air fry at 400ºF, 5 minutes on each side

  5. serve with dill dressing

  6. enjoy!
