
Jackfruit Cakes

Ingredients
1 can of jackfruit
3/4 cup panko
1/4 cup vegan mayo
3 green onions
1/4 cup cilantro
juice 1/2 lemon
1 tsp paprika
1 tsp garlic powder
salt and pepper, to taste
Directions
in food processor, chop green onion and cilantro. Drain and rinse jackfruit and add to food processor. Pulse a few times to break up the jackfruit
in a bowl, combine the jackfruit mixture with remaining ingredients and mix well
using 1/4 cup, form the jackfruit cakes
air fry at 400ºF, 5 minutes on each side
serve with dill dressing
