Maple Bacon Sweet Potatoes & Butternut Squash

Ingredients

  • 1 large sweet potato, peeled and diced into chunks

  • 1 small butternut squash, skin removed and diced into chunks

  • 1-2 tablespoons olive oil

  • 1/2 teaspoon each salt and pepper

  • 1/4 teaspoon smoked paprika

  • 1/8 teaspoon cinnamon

  • 2 tablespoons maple syrup

  • 3 slices of bacon, diced into chunks

Directions

  1. Toss diced sweet potatoes and butternut squash with olive oil and seasonings

  2. Cook veggies in air fryer at 400° for 5 to 7 minutes. Add diced slices of bacon on top of veggies and cook another five minutes or so

  3. Remove veggies and bacon to a bowl and toss with maple syrup. Return to air fryer for an additional 3 to 5 minutes until bacon is crisp and veggies are soft

  4. Sprinkle with chopped parsley and serve!
