It doesn't take up any room in your oven or on your stove- it can easily be made in your air fryer! 1 large sweet potato, peeled and diced into chunks
1 small butternut squash, skin removed and diced into chunks
1-2 tablespoons olive oil
1/2 teaspoon each salt and pepper
1/4 teaspoon smoked paprika
1/8 teaspoon cinnamon
2 tablespoons maple syrup
3 slices of bacon, diced into chunks
Directions
Toss diced sweet potatoes and butternut squash with olive oil and seasonings
Cook veggies in air fryer at 400° for 5 to 7 minutes. Add diced slices of bacon on top of veggies and cook another five minutes or so
Remove veggies and bacon to a bowl and toss with maple syrup. Return to air fryer for an additional 3 to 5 minutes until bacon is crisp and veggies are soft
