Pat loves anything with the word loaded in the title of the recipe and is so excited to share this new recipe with you! These teeny tiny potatoes can be made easily in your air fryer for a crispy addition to any meal! The toppings are versatile and Pat hopes you enjoy this delicious recipe!
1 tablespoon of avocado oil (or avocado oil spray)
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon ranch seasoning (optional, not pictured)
1/2 cup pub cheese, melted
About 2 tablespoons sour cream
About 2 tablespoons of diced and cooked pancetta
About a tablespoon sliced green onions
Salt & pepper to taste
Directions
Wash, pat dry, and slice potatoes in half
Coat in avocado oil, salt, pepper, and ranch seasoning (if using)
Cook in air fryer at 400° for 10-12 minutes until potatoes are tender. While potatoes cook, prepare toppings
Cook diced pancetta and drain grease on paper towel
Melt pub cheese on stove top in saucepan until cheese is melted (can also melt in microwave safe dish in 15 second increments, stirring in between). Keep warm.
When potatoes are finished, use spoon to drizzle potatoes with melted pub cheese. Do the same with sour cream. Then top with pancetta, green onions, and season to taste with salt & pepper
