Flippin' Pat knows it's cold and snowy out there and is excited to share this new Zippy Zuppa recipe with you! It can be made on your stovetop or Instantpot which are both great options for this hearty and comforting soup! Flippin' Pat hopes you will give this a try next time you make soup and of course stay safe and warm!
Optional garnishes: Parmesan cheese, red pepper flakes or chili oil
Directions
Stovetop
Split sausage in half with a knife and remove film/casing. Add sausage to a large, heavy pot and cook over medium-high heat. When it is brown and almost cooked through (5 mins), remove from pot
While sausage cooks, cut potatoes in half. Add them to the pot when the sausage is done. Cook them until they form a brown crust, about 2-4 minutes
Add a slash of wine (if using), garlic and onion. Cook until onions are softened, another 2-3 minutes. Add seasonings to taste (21 Seasoning Salute, Salt, Pepper)
Add 2-3 cups of broth and reduce heat to medium-low. Cover and simmer mixture until potatoes can be pierced easily with fork, about 15-20 mins
Add sausage and as much kale as you would like! Cover and simmer until kale is tender, 3-5 mins
Add the finishing touches! Complete the dish with cream, a few tablespoons of pesto, parmesan, and a squeeze of lemon
Serve and Enjoy!
Instant Pot
Using the saute function, follow steps 1-3 from the stovetop directions
After adding the broth, put the lid on and cook on high pressure for 5 minutes
If potatoes need more time, cook on high pressure for 2-3 more minutes
When potatoes are tender, switch instant pot back to saute to complete steps 5 and 6.
