Roasted Vegetable Fried Rice
Ingredients
(All ingredients are from Trader Joes)
- 1c cooked rice
- 5 large rainbow carrots
- 1c chopped broccoli
- 1/2c peas
- 1/2c corn
- olive oil
- salt, pepper, crushed red pepper flakes to taste
- Coconut aminos to taste
- 4 eggs
Instructions
- Preheat oven to 375 and chop carrots and broccoli. Coat lightly with olive oil and sea salt, roast for 15 minutes.
- When done, add carrots, broccoli, peas and corn to a pan with a little olive oil and saute until peas are cooked. Add salt, pepper, crushed red pepper flakes, coconut aminos, and rice - mix well. Make a well in the middle of the pan and crack eggs into it. Scramble and then toss with the mixture.
