Roasted Vegetable Fried Rice

Ingredients

(All ingredients are from Trader Joes)

  • 1c cooked rice
  • 5 large rainbow carrots
  • 1c chopped broccoli
  • 1/2c peas
  • 1/2c corn
  • olive oil
  • salt, pepper, crushed red pepper flakes to taste
  • Coconut aminos to taste
  • 4 eggs

Instructions

  • Preheat oven to 375 and chop carrots and broccoli. Coat lightly with olive oil and sea salt, roast for 15 minutes.
  • When done, add carrots, broccoli, peas and corn to a pan with a little olive oil and saute until peas are cooked. Add salt, pepper, crushed red pepper flakes, coconut aminos, and rice - mix well. Make a well in the middle of the pan and crack eggs into it. Scramble and then toss with the mixture.
