Roasted Vegetable Fried Rice

Ingredients

  • 1 cup cooked rice

  • 5 large rainbow carrots

  • 1 cup chopped broccoli

  • 1/2 cup peas

  • 1/2 cup corn

  • 4 eggs

  • olive oil, salt, pepper, crushed red pepper flakes to taste

  • Coconut aminos to taste

Directions

  1. Preheat oven to 375 and chop carrots and broccoli. Coat lightly with olive oil and sea salt, roast for 15 minutes

  2. When done, add carrots, broccoli, peas and corn to a pan with a little olive oil and saute until peas are cooked

  3. Add salt, pepper, crushed red pepper flakes, coconut aminos, and rice - mix well

  4. Make a well in the middle of the pan and crack eggs into it. Scramble and then toss with the mixture

  5. Enjoy!
