Cinnamon Bun Cauliflower Gnocchi

Ingredients

Gnocchi:

  • 1 pack cauli gnocchi
  • 1 Tb coconut oil melted
  • 1 tsp cinnamon
  • ½ tsp Nutmeg
  • ⅛ tsp Cloves
  • ⅛ tsp salt

Icing :

(food processor)
  • 2 cup coconut flakes
  • Vanilla ½ tsp
  • 1 tsp maple syrup
  • 1 tb of melted coconut oil

 Instructions

  1. Set oven to 425F
  2. Mix the cauliflower gnocchi with melted coconut oil, cinnamon, nutmeg, cloves, and salt. Lay in even layer on parchment lined sheet tray.
  3. Bake in oven 15 min, flip/shuffle and cook another 15 minutes.
  4. While Gnocchi is in the oven, in a food processor, process your coconut flakes until smooth, scrape the sides when needed. Once completely smooth, add vanilla, maple syrup, ad melted coconut oil and pulse to combine. 
  5. Once cauliflower is crispy and cooked through, enjoy topped with your coconut icing.

  • How about airfrying these if you didn’t want to do them in the oven to crisp them up and just adjust it to the right consistency?
