Chocolate Chip Cookie Brownies

One of my favorite childhood sweets were chocolate chip cookie brownies. I hadn’t had them in years, because I used to just make with boxed mixes and it would be so easy. Now that I eat Paleo, it is much more difficult to make Paleo baked goods. But now that there are way more Paleo baking mixes on the market it is easy to make these short cuts. So I used Trader Joes [Paleo] chocolate chip cookie mix in combination with my Paleo brownie mix and it was killer! Only takes a few minutes to whip up and tastes as good as my childhood favorite ones I remember so well!

I don’t care how old you are, but one of the best foods out there are chicken nuggets. The one thing I missed the most when starting to eat healthier were crispy chicken nuggets. All store bought ones were always made in gross oils and coated with unhealthy flours. Because of this I created a healthier at home chicken nugget that is just as good and easy to make. With better for you flours, and healthy oils, I do not feel bad about eating 20 of these at one sitting!

Cinnamon Bun Cauliflower Gnocchi

One of my favorite kids food was the Aunti Anns cinnamon pretzels. I haven’t had anything semi close to these since becoming healthier and gluten free until I started making cinnamon roasted Cauliflower Gnocchi. So I figured, why not make it into an auntie ann inspired cinnamon  gnocchi heaven, but make it even better by adding healthy coconut icing?! When I did it I realized it not only tastes like an Auntie Ann cinnamon pretzel but also a delicious cinnamon bun. This instantly became a favorite recipe of mine for a little sweet treat that is low sugar, Paleo, and has vegetables.
