Salty Almond Butter Chocolate Blondies

Ingredients

  • 1 1/2 sticks salted butter
  • 3/4 cup creamy almond butter

  • 1 cup light brown sugar

  • 1/2 cup granulated sugar

  • 2 eggs
  • 1 tablespoon vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 cup semi sweet chocolate chips

  • 3-4 ounces dark chocolate chunks (measure with your heart)
  • flaky sea salt

Directions

  1. Preheat the oven to 350º F. Line a 9x13 inch glass casserole with parchment paper

  2. In a microwave safe glass mixing bowl, melt together the butter and 1/2 cup almond butter, stirring every 30 secs until melted

  3. Stir in the brown sugar, sugar, eggs, and vanilla. Add the flour and baking powder

  4. Transfer the bowl to the freezer and chill 5 min until the dough is no longer warm to the touch

  5. Spread 1/2 the dough out in the casserole. Dollop and then gently swirl the remaining 1/4 cup almond butter into the dough and sprinkle with chocolate chips

  6. Add the remaining dough overtop, adding more chocolate chips

  7. Transfer to the oven and bake for 20-22 min

  8. Remove from the oven and sprinkle the chocolate chunks over the blondies

  9. Return to the oven for 1-2 minutes to gently melt the chocolate. Sprinkle with sea salt

  10. Let cool completely, refrigerating for 20-30 min, and then cut into bars

  11. Enjoy!
