Tomato Curry Pasta

all ingredients can be found at from Trader Joes

  • 1c crushed tomatoes
  • 1can coconut milk
  • 2tsp red curry paste
  • to taste: turmeric, black pepper, sea salt, onion powder, dried parsley & basil
  • 3-4tbsp almond flour
  • 1 bag brown rice quinoa fusilli 


Prepare water for pasta and cook pasta according to package instructions.

While waiting for the pasta to boil, in a large skillet, mix together crushed tomatoes, coconut milk and red curry paste. Bring to a simmer on low-medium heat. Once simmering add spices and whisk in almond flour. Let sit at a simmer for 5 minutes.

When pasta is done, toss with sauce & enjoy!
