Watermelon Pizza!! Saying these two words makes Pat so happy. This is an extremely easy to make appetizer that will WOW anyone that gets a peak and if they're lucky enough to get a bite will come back for another slice of 'za. Pat loves this recipe because it's easy to modify for a big or small crowd. Enjoy!
- 1 watermelon (any size depending on preference for "pizza" slices
1 cup vegan yogurt (Pat used Kite Hill vanilla bean)
5 strawberries sliced like pepperonis
1/2 cup blueberries
1/2 cup blackberries
- Basil (4-5 leaves chiffonade)
Edible flowers (optional)
Slice watermelon in half down the middle and then a few more slices 2-3 inches thick depending on size of watermelon
Using a spoon, dollop a spoonful of yogurt onto the middle of the watermelon slice and circle around like you would pizza sauce
- Layer fruit on top as you desire. Finish with basil. Enjoy!
