Appetizer/Thanksgiving
Pat can't believe it's already November and Thanksgiving is almost here! Pat is so excited to share this Gluten Free Cheesy Scallion Cornbread and hopes you enjoy it alongside your favorite chili or at your Thanksgiving table!
1 box Trader Joe's Gluten Free Cornbread Mix (mix requires 1 egg, ½ cup oil, and ¾ cup milk)
¾ cup shredded cheddar cheese
2 scallions, chopped thin
Preheat the oven to 350F and line a 8x8 pan with parchment paper
Prepare Cornbread Mix according to package instructions. Stir in shredded cheddar cheese and sliced scallions
Move batter to the baking pan and cook for 20-25min, or until middle is set and a toothpick inserted comes out clean
Enjoy warm with butter or serve alongside your favorite chili!
