Pickled onions are the perfect accoutrement for salads, sandwiches (especially those with rich meats like pulled pork) and tacos. They are so easy to make and take an average dish and make it gourmet!

Ingredients
1 thinly sliced red onion
1 cup apple cider vinegar
2 tsps salt
1 tsp black peppercorns
1 tbsp honey
1 bay leaf
Directions
Slice your onions very thinly and put into a mason jar or sealable container.
Bring the rest of the ingredients to a boil in the pot. Once the salt and honey have dissolved, take off the heat.
With a strainer, strain the liquid into the pickled red onions jar, you don't want any of the peppercorns or the bay leaf in the container.
Immediately seal and let it cool off on the counter. Refrigerate once within 3 hours, and store in the fridge.
