Ingredients

4 cups of quinoa (uncooked)
4 cups of water or broth to cook quinoa
1 can black beans
1 bag of fire roasted corn
1 jar of salsa
1 red onion, chopped
2 bell peppers, chopped
bunch of cilantro, chopped

Directions

Cook quinoa (Pat likes using an Instantpot at high pressure for 1 minute)
Once quinoa is done cooking, mix with beans, corn and chopped veggies
Stir in jar of salsa
Top with cilantro
Enjoy!
