
Unexpected Cheddar Hatch Chile Mac & Cheese

Ingredients
16 oz pasta of choice (preferably one with ridges)
2 cups whole or 2% milk
3 tablespoons butter
1 container Trader Joe’s Unexpected Cheddar Dip with Hatch Chiles
3-4 raw whole hatch chiles (depending on size)
1 cup shredded white cheddar cheese
Salt & pepper to taste
Directions
Add salt and water to a pot and bring to a boil
Add pasta and cook until al dente (do not overcook)
Meanwhile, slice whole hatch chiles into small slices and place in a hot pan with olive oil, salt, and pepper
Cook hatch chiles until blistered and soft
Once pasta is done, reserve ½ cup of water for sauce and drain the rest
Add pasta back to pot, add shredded cheddar cheese and slowly add reserved pasta water
Stir until combined and cheese has melted
Add cooked hatch chiles
Add milk and bring to a simmer
Add ½ container of Unexpected Cheddar cheese dip (adjust according to taste)
Add salt and pepper to taste
Mix well until pasta is coated and all cheese is melted
Serve and enjoy!
