One of Flippin' Pat's favorite traditions to eat during Passover is Matzo Brei for breakfast or brunch. This classic dish is made with matzo and eggs and can be made sweet or savory, whatever your tastebuds crave! Flippin' Pat hopes you give this a try before Passover ends this weekend!
Toppings: (sweet) fruit, syrup, butter, cinnamon, vanilla (savory) salt & pepper, everything but the bagel
Directions
Run matzo under water and break apart into small pieces over a colander
Whisk together eggs
In a warm pan, spray cooking spray and add matzo pieces
Pour eggs over matzo and toss to cover pieces in eggs
Cook until eggs are fully cooked and not runny
For a sweet matzo brei, top with butter, syrup, vanilla, cinnamon, or fruit. For a savory matzo brei, top with salt & pepper or everything but the bagel seasoning
