Ingredients

  • 2-3 sheets of matzo

  • 2-3 eggs (1 egg per sheet of matzo)

  • Toppings: (sweet) fruit, syrup, butter, cinnamon, vanilla (savory) salt & pepper, everything but the bagel

Directions

  1. Run matzo under water and break apart into small pieces over a colander

  2. Whisk together eggs

  3. In a warm pan, spray cooking spray and add matzo pieces

  4. Pour eggs over matzo and toss to cover pieces in eggs

  5. Cook until eggs are fully cooked and not runny

  6. For a sweet matzo brei, top with butter, syrup, vanilla, cinnamon, or fruit. For a savory matzo brei, top with salt & pepper or everything but the bagel seasoning
