Gluten Free Pumpkin Spice Granola

Ingredients

  • ½ cup raw almonds

  • ½ cup raw pumpkin seeds (pepitas)

  • 2 cups gluten free oats

  • ¼ cup pumpkin puree

  • ¼ cup maple syrup

  • ¼ tsp salt

  • 1 tbsp pumpkin pie spice

Directions

  1. Preheat oven to 350 degrees

  2. In a food processor or blender, add your almonds and pumpkin seeds. Pulse until coarsely chopped, but not too small

  3. Add everything in a mixing bowl. Mix with Pat (or any spatula!) to make sure everything is incorporated

  4. Add parchment to a sheet tray and pour your granola into a flat, even layer. Place in the oven and roast for 10 minutes. After 10 minutes check to see how it is looking, if it is golden brown and crispy, pull it out. If not, place in the oven for another 5 minutes. Remove once golden brown

  5. Cool for 20 minutes then store in an airtight container

  6. Enjoy with your favorite yogurts, dessert, fruit, etc.
