One of my favorite guilty pleasures is chicken fingers. But ever since going gluten free its hard to find healthy chicken strips that also taste good. Most are soggy without any flavor. This is why plantain crusted chicken is the perfect solution to both bad textureand lack of flavor that many healthy chicken strips have. These chicken fingers are crunchy, crispy, sweet and salty, and packed with flavor. Super easy, and a crowd pleaser whether you are cooking for your kids, or snacking for yourself! 

This is a delicious cold salad that is light, but brings all the flavors! Perfect as a stand alone meal or a side to compliment a bigger meal. Just in time for those warmer months!

One of my favorite kids food was the Aunti Anns cinnamon pretzels. I haven’t had anything semi close to these since becoming healthier and gluten free until I started making cinnamon roasted Cauliflower Gnocchi. So I figured, why not make it into an auntie ann inspired cinnamon  gnocchi heaven, but make it even better by adding healthy coconut icing?! When I did it I realized it not only tastes like an Auntie Ann cinnamon pretzel but also a delicious cinnamon bun. This instantly became a favorite recipe of mine for a little sweet treat that is low sugar, Paleo, and has vegetables.
