    With Cinco de Mayo right around the corner, it would be a crime if I didn’t post a Mexican themed recipe. One of my favorite dips ever, if not favorite, is Guacamole. The silky avocado mixed with crunchy onions, jalapeños, and tang from the acid is the best on just about everything. I love to add a little sweetness by adding a ripe mango, taking it to another level. This Guac is a must for this Cinco de Mayo, and just about every Taco Tuesday!

    One of my favorite side dishes are casseroles, but most are unhealthy and filled with pastas, mayos, cream sauces, and loads of things making them tasty, but heavy. This is my go to vegan and paleo casserole that is filled with flavor, isn’t too heavy, and super healthy! 

    The layers of eggplants, onions, seasonings and sauce make for the perfect side dish or even substitute for meat as a main dish.

    I don’t care how old you are, but one of the best foods out there are chicken nuggets. The one thing I missed the most when starting to eat healthier were crispy chicken nuggets. All store bought ones were always made in gross oils and coated with unhealthy flours. Because of this I created a healthier at home chicken nugget that is just as good and easy to make. With better for you flours, and healthy oils, I do not feel bad about eating 20 of these at one sitting!
